Will this winemaking technique work?

You're gambling when you allow wild yeasts to get a start in the fermentation process. In theory, it could work, though. There is tea wine and I have made lemon wine (good stuff), so it could work or could give you a case of the runs. If you want to try it, I'd suggest starting from scratch.
