yeast is one of the only things that ferment the grapes. anything else is like a 1-5% chance of getting your hands on, its some crazy stuff thats not good for you but it works fine. your grandpa was probably making champaign and you just add the wine without adding yeast to a bottle with a cork and a wire to hold the cork and prevent the bottle from breaking. thats what makes it bubbly
